Hi Jojo! This icing recipe is much closer to an italian meringue, because I use a sugar syrup to cook. the glossiness might be accentuated by the window lighting, which picks up on the colour (for whatever reason) more so than the white :) I used my trusty butter mousseline recipe, with a few new tricks which I'm noodling around with.
